The centerpiece of Burns Night is the traditional Burns Supper. Typically, the supper begins with the Haggis, carried by the chef, being piped into the gathering . One of the highlights of the evening is the “Address to a Haggis,” where the haggis is presented to the diners with great ceremony. A recitation of Burns’ famous poem “Address to a Haggis” accompanies the cutting of the haggis, often done by some well kent face in the area.

The main course always features haggis, a traditional Scottish dish made from sheep’s offal, oatmeal, suet, and spices, accompanied by mashed potatoes (“tatties”) and mashed turnips (“neeps”). “The Selkirk Grace,” a short prayer attributed to Burns often starts the proceedings.

Scottish treats such as Homemade Scottish Tablet, Shortbread and Dundee Cake can also be served during the celebrations.

Throughout the evening, guests enjoy lively speeches such as “The toast to the Lassies” and “The reply from the lassies” , poetry readings (no supper is complete without Tam o’ Shanter), and toasts with Scotch whisky. What is Scottish Tablet?

Scottish tablet is a traditional Scottish sweet that is similar in some ways to fudge but 100 times nicer! The ingredients are similar to fudge but the taste and texture are completely different. Real Scottish Tablet is made from just 3 or 4 ingredients with no additives or preservatives. Always try to choose Homemade Tablet and avoid mass produced tablet heavy on vanilla flavourings.

How do you make Scottish Tablet?

I use sugar, butter, and condensed milk, and this is boiled to a very high temperature. It’s impossible to provide a recipe as everyone’s tablet will be different. Timing is important and this will all depend on the weather, the type of pot used and also the brand of butter, sugar and condensed milk. After the ingredients have been boiled, it’s important to beat the mixture well before pouring into your tray to leave to set. The tablet should be set within about 30 mins and without the need to put in the fridge.

My tablet is extremely smooth and just melts in your mouth. It has a rich, buttery, and slightly caramelised flavour. What you don’t want is tablet that’s too soft. You will know it’s too soft by the light colour and also the fact that it doesn’t “pop” out of the tin.

Dundee cake is a traditional Scottish fruitcake that is often associated with the city of Dundee here in Scotland.

The original commercial development of the cake began in Dundee in the late 18th century in the shop of Janet Keiller  but was possibly originally made for Mary, Queen of Scots in the 16th century.  It was mass-produced by the marmalade company Keiller’s marmalade who have been claimed to be the originators of the term “Dundee cake”.

A popular story is that Mary Queen of Scots did not like glacé cherries in her cakes, so the cake was first made for her, as a fruit cake that used blanched almonds and not cherries.  The top of the cake is typically decorated with concentric circles of almonds

. The cake has a rich, dense texture and a slightly crumbly, buttery flavor. It’s often enjoyed during special occasions or as a treat with tea or coffee.
